Crab and Corn Chowder

Crab and Corn Chowder
Ingredients:
  • 1 can Oregon’s Choice Gourmet Dungeness Crab
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups frozen corn
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
Instructions:
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté until softened.
  2. Stir in the corn and cook until slightly browned.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  4. Stir in the heavy cream, Old Bay seasoning, salt, and pepper.
  5. Using an immersion blender or a regular blender, blend the mixture until smooth.
  6. Return the mixture to the pot and add the crab meat. Heat until hot.
  7. Serve with a sprinkle of fresh parsley and some crusty bread on the side.
This comforting chowder is a delicious way to enjoy canned crab meat in the colder months. The sweetness of the corn and the richness of the cream make for a satisfying and flavorful soup!
